都说老茶要煮着喝味道更好,但是,你真的知道其中的原因吗?

It’s said that the taste of aged tea will be better with boiling, but do you really know the reason? 

老茶是历经岁月的沉淀,用时间去置换而来的。煮后的老茶茶汤色为红褐色,滋味鲜醇爽口入口后喉咙甘甜非常舒服。

很多人爱老茶就是喜欢老茶那种随时间沧桑变化而转变的特质。老茶属于陈茶,耐泡型。根据自身需求,将适量的茶叶和冷的山泉水一起放入壶中。

Many people love aged tea as they love the feature of aged tea transforming with time. Aged tea is the tea with many years and endurable to brew. Based on own demand, put proper amount of tea and cold mountain spring water in teapot. 

开火煮开,然后文火慢熬,因为火太大茶水就干了,所以不要这么做。只要保持壶不会凉掉就可以了,出水就能喝,喜欢喝浓茶的就多煮一会,不需要太浓的就少煮一会。茶汤的甘甜、茶香的自然,出乎意料。

Boil with large fire and then decoct with mild fire. If the fire is too large, tea water will be dry easily. Keep the pot not cold and drink as soon as tea soup comes out. If loving strong tea, boil for longer time. If loving flat taste, boil for less time. The sweetness and fragrance of tea soup are beyond expectation. 

有的人直接拿来泡了就喝,也未尝不可,但却未曾想这是大大的暴殄天物。老茶应该煮着喝,煮起来才真正有味,才能品出陈茶的香韵。

Some people drink directly after brewing and it’s not impossible, but it really misuses things. Aged tea should be boiled for drinking and then original taste can be tasted. 

煮茶和泡茶不一样,泡茶是很快就能喝到茶,很迅速很方便,但是煮茶却比较考验喝茶人的耐心,你要慢慢的等,煮得不到火候茶汤没有口感和特色,只有火候掌握得当,然后时间够长,才能等到你想喝的那个茶味。

Boiling tea is different from brewing tea. People can drink tea very rapidly and conveniently through brewing. However, boiling tea requires the patience of those drinking tea and people should wait slowly. If heat control is not proper, the tea soup will be lack of flavor and feature. Only with proper heat control and enough time, you can really drink the tea you expect. 

特别是像老茶这样有岁月的味道的茶,一定要用慢火煮着喝,这样才能真正品味到茶的品质。

Especially for the tea full of time flavor such as aged tea, it’s essential to boil with mild fire and then you can really taste the quality of tea.

煮老茶之前,先泡几泡,这样煮出来的老茶风味更加。

前六道老茶可以用泡法,出汤在公道杯。第七道把茶叶转移到提梁壶中去煮。待煮好后出汤和原来泡法出的汤混合起来喝,看看和直接煮出来味道有什么不同?估计是久煮易分解的成分先用泡法浸出,和煮出的茶汤混合则更丰富。  您可以一试哦!!!好玩着呢!
